Late one night while sharing a craft brew, Steven and Zach had a question that would take them down the rabbit hole. Why is there such a lack of product diversity in the distilling industry?
Why can consumers of craft beer walk the aisles and find hundreds of wildly different beers? Beers flavored with chocolate, brewed with specialty malts? It seems like every day there's more options, more flavors for craft beer consumers.
Why is the distilling industry different? We've seen the consumer demand is there for nontraditional spirits. Think Fireball, Seedlip, or even the left-field Screwball (pun intended). Whats holding the industry back? Perhaps its risk.
What if distilleries could make spirits like Fireball and Screwball, but with the mouthfeel and smoothness of aged products? We believe the only real reason we don't see it more often is that distillers are stuck with a choice.
The choice is either to barrel age and make an entirely traditional product or to go head-first with additives and flavorings. We believe this is because of the immense investment required to do barrel aging: capital, time, and labor. With an investment that big, distillers simply need their spirit to succeed when it hits the liquor store shelves.
